LOVE NOTE 150: 'Tis the Potato Soup Season!



Hey Friends!

First week with the clock set back. The evenings getting darker quicker, and the weather definitely on the chill. No complaints as this is definitely the time of the year for a hearty bowl or bowls of soup! What kind of soup is better than potato soup with cheese and bacon, right?! Simplified with 7 ingredients makes for one heavenly spoonful after another. Don't forget a side of cheese bread... and for me, I'll be stuffed before the entree tonight (which on the menu tonight is super easy meatloaf - Love Note #110!)


Ingredients:

  • 3 peeled and cubed potatoes (about 3 cups)
  • 1 can of cream of chicken soup
  • 1 cup 2 % milk
  • 4 slices of cooked turkey bacon, chopped(I just cooked it in the microwave!)
  • 1/4 cup of shredded low-fat cheddar cheese
  • salt and pepper to taste

Instructions:

  • To a pot, add the cubed potatoes and add enough water to cover. Cover and cook on medium heat for 15 minutes or until tender. Drain off excess water.
  • Stir the milk, soup, bacon, and cheddar until combined then add to the potatoes and keep on range top uncovered over low-medium heat for an additional 15 minutes. Do not allow to boil.
  • salt and pepper to taste
  • (optional step: to thicken the soup, I kept the covered pot on top of the stove even after I turned off the heat. This way I took advantage of the cooling stove top so it continued to cook the soup for a little while longer and made the soup even richer... Fabolishess!)
And there you have it... quick, simple and delicious! Three words: Hits the Spot:)
