After spending an afternoon trying to put together our new little space-saver kitchen table, and with the temperature outside still requiring too much North Face attire, well, it was a whip-up-whatever dinner kinda day!
Ingredients for the sauce:
- 1/2 cup red wine
- 1/2 cup milk (I used almond milk)
- 1/2 teaspoon garlic salt
- 1/2 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1 tablespoon flour
- 2 teaspoons butter
- 2 lemon wedges
- 1/4 cup of tomato sauce
- On medium heat, in a pan add butter until it is melted
- add the wine, milk garlic salt, garlic powder, pepper, lemon, flour, and tomato sauce
- constantly stirring until the sauce is reduced to about 1/2. Remove from heat.
Meatball Ingredients:
- 1 pound of ground beef (or any ground meat variety - go turkey or chicken to make it a light affair!)
- 1 egg
- 1 tablespoon flour
- 1/2 teaspoon pepper
- 1 teaspoon salt
Instructions:
- Preheat oven to 400 degrees
- Place ground beef, egg, flour, pepper, and salt in a bowl. Mix until combined
- shape meat into 1 inch balls
- place in a baking dish
- bake for 25 minutes - flipping them over at the halfway mark.
There you have it! So quick and easy, leaving you both time for whatever you have in mind post dinner;)
